The Tunisian Sandwich
In tribute to the brave souls fighting for change during the Arab Spring, I thought I’d mention the esteemed Tunisian sandwich.
A baguette stuffed full of tuna, egg, olives, and salad, I remember buying this on the streets of Tunis
and I’ve often tried to recreate it but there is always something missing.
It might be a special sauce, possibly the hot sauce harissa, possibly a perfectly prepared vinaigrette.
The other day, I added cornichons (or miniature pickled cucumbers), the high concentration of vinegar imparting a tart flavour that really brought out the tuna and olives.
It’s still not quite right though. I think another visit to Tunisia may well be needed. Or maybe someone can help me recreate the perfect Tunisian sandwich?
