Salmon & Scrambled egg with cress on Scottish potato cake

A lovely dish from Kiwi friend Hamish, who obviously has Scottish roots. He says this is a modified version of Jamie Oliver’s recipe from Great British Food. And if I know Hamish, that means it’s a much improved version.
